To make whole grain Einkorn levain, you need 2.4 oz Einkorn flour, 2.4 oz water, 1 oz or 2 tablespoons mature culture. For the final dough, you will need 5.6 oz Einkorn flour, ½ lb bread flour, ½ lb water, 3 oz salt, and 4.8 oz mature culture.
Make the poolish by dissolving the mature culture in the water and mixing it in the Einkorn flour. It should be done approximately 12 to 14 hours before the final mix. Let the mixture stand in a covered container at about 70 degrees F.

Cover the dough for 2 ½ hours for fermentation. Fold it twice during the fermentation process with 50 minutes intervals. Then, shape the dough oblong or round and place it on a parchment paper. Let it rest for 2 to 2 ½ hours. Before putting the dough in the oven, score it with serrated knife.
Bake the loaf at preheated 450 degrees F for 40 to 45 minutes. For a perfect crust, put in the oven a steam pan or spray the walls with water three times during the first 15 minutes of baking.
